ما هو الهيستامين؟
الهيستامين مادة كيميائية ينتجها الجسم طبيعيًا، وله وظائف مهمة في عدد من الأجهزة.
يسهم الهيستامين في:

تنظيم إفراز حمض المعدة.
التواصل بين الخلايا العصبية.

يُخزّن جزء من الهيستامين داخل الخلايا البدينة والخلايا القاعدية، ويمكن أن يُطلَق استجابةً لمحفزات مختلفة. كما قد يدخل الهيستامين إلى الجسم من خلال بعض الأطعمة، خصوصًا الأطعمة المخمرة أو المعتّقة أو المخزنة لفترات طويلة.
وجود الهيستامين في الجسم ليس مشكلة بحد ذاته؛ فالمشكلة المحتملة تحدث عندما تصبح كمية الهيستامين المتناولة أو المتحررة أكبر من قدرة الجسم على تكسيرها والتخلص منها.
ما عدم تحمل الهيستامين؟
يُستخدم مصطلح عدم تحمل الهيستامين لوصف ظهور أعراض متكررة يُشتبه في ارتباطها بتناول الهيستامين، نتيجة اختلال التوازن بين كمية الهيستامين التي تدخل الجسم أو تتحرر داخله وبين قدرته على تكسيرها.

الأعراض العصبية والعامة
قد تشمل:

توجد خلافات حول تصنيف أطعمة مثل الطماطم، والباذنجان، والسبانخ، والأفوكادو، والموز، والحمضيات، والشوكولاتة والمكسرات. كما أن مفهوم «الأطعمة المحررة للهيستامين» لا يستند دائمًا إلى أدلة متسقة.

ما الفرق بين عدم تحمل الهيستامين وحساسية الطعام؟

٣. تجربة حمية منخفضة الهيستامين
يمكن استخدام حمية منظمة منخفضة الهيستامين لفترة قصيرة، غالبًا من أسبوعين إلى أربعة أسابيع، مع مراقبة الأعراض.
إذا لم يحدث تحسن واضح، يجب إعادة النظر في التشخيص بدل جعل الحمية أكثر تقييدًا.

تحليل إنزيم DAO في الدم
قد يُستخدم قياس DAO بوصفه عاملًا مساعدًا، لكن له حدود مهمة:
قد يتغير المستوى لدى الشخص نفسه.
